Black truffles

Black truffles are especially appreciated in France. They are spherical in shape, range from walnut size to oranges or more. They can grow up to half a kilo. The flavor is retained even after cooking, but we must bear in mind that their flavor intensity is approximately 50% lower compared to the white truffle. All black truffles, which have more than six grams are grouped into a single class. Growth starting in the spring.

Tuber Melanosporum Vittadini - Pèrigord black truffle

They are round, the size varies from the size of a walnut to that of an orange, or even more. They usually grow up to 0,5 kg. They retain the aroma even after being cooked, but we have to take into consideration that the aroma has only half of the intensity of white truffles. All black truffles weighing more than 6 grams are classified in the same class. Where does it grow: it grows 5-30cm under the surface, in symbiosis with the following trees: Hop-hornbeam, Common Hazel, Holm Oak, Turkish Oak, and Downy Oak. Gathering period: from mid-November until end of March.

Tuber Aestivum Vittadini - Black summer truffle

Taste and aroma: It has a delicate and pleasant aroma and a typical gentle scent of fresh mushrooms. Gathering period: from mid-June until end of October. Where does it grow: grows in calcareous terrains though it can be also found in clay terrains. The tubers grow only a few centimeters deep in symbiosis with: Scots Pine, Downy Oak, Holm Oak, Oak, Black Hop-hornbeam, and Common Hazel.

Tuber Brumale Vittadini - Black winter truffle

The taste and aroma are very tasty and pleasant. Gathering period: from mid-November until end of March. Where does it grow: grows in highly porous calcareous terrains. It grows 5-30cm under the surface, in symbiosis with the following trees: Scots Pine, Downy Oak, Holm Oak, Oak, Black Hop-hornbeam, and Common Hazel.

Tuber Macrosporum Vittadini - Black smooth truffle

The taste and aroma resemble the white truffle but they differ in one respect, the presence of a garlic aroma. Gathering period: from August to December. Where does it grow: grows in clay terrains. It needs a high degree of moisture and shade, especially during maturation. It can be found only a few centimeters deep in symbiosis with: Downy Oak, Turkish Oak, Black Hop-hornbeam, Black Poplar, White Poplar, White Willow, and Goat Willow.

Tuber Brumale Moschatum - Muscat truffle

The taste and aroma resemble a strong moss smell; it has a distinctive slightly spicy taste. Gathering period: from mid-November until end of March. Where does it grow: grows in highly porous calcareous terrains that are rich in humus. It grows 5-30cm under the surface, in symbiosis with: Scots Pine, Oak, Holm Oak, Black Hop-hornbeam, Common Hazel, and Turkish Oak

Tuber Aestivum Uncinatum

The taste and aroma are pleasant and strong, the »meat« has a good taste that resembles the taste of hazelnuts. Gathering period: from end of September until end of February. Where does it grow: grows in shady areas, in symbiosis with: Oak, Turkish Oak, Black Pine, Black Hop-hornbeam, Hop-hornbeam, Common Hazel, and Common Beech.

Tuber Mesentericum Vittadini

Taste and aroma: The smell is very strong; it vanishes and loses intensity if exposed to fresh air. Gathering period: from end of September until end of February. Where does it grow: grows in aerated soil that is rich in humus, in symbiosis with: Oak, Turkish Oak, Black Pine, Black Hop-hornbeam, Common Hazel, and Common Beech.
